Sweet Potato Brownies
My life has changed with the creation of this recipe.
It tastes like fall, and every bit like a real brownie, but it’s actually good for you! In fact, it’s loaded with whole foods from the Juice Plus+ Complete chocolate protein mix. With only 4 ingredients, it’s quick and simple to whip up.
1 cup of mashed sweet potatoes (about 2 small sweet potatoes, or one large). I put mine in the slow cooker on low overnight, and then remove the skins to mash.
1/4 cup of Juice Plus+ Complete Chocolate Mix
1/2 cup of your favorite nut butter
2 Tablespoons of pure maple syrup
A Splash of your favorite dairy-free milk
Preheat oven to 350.
Grease a small cake pan or loaf pan.
Over low heat on the stove, melt your nut butter and maple syrup. Add a spash of milk to help it cream together.
Once melted, add remaining ingredients into the pan with melted nut butter and syrup. Hand mix (it will be very thick).
Pour the mixture into prepared pan, and bake for around 20 minutes (until cooked through).
Allow it to completely cool before slicing. Brownies are very moist. Will hold best if kept in refrigerator.
